What is raw honey?
Raw honey, also known as natural, pure, or unfiltered honey, is honey that has not been heated, filtered, or processed in any way. This means that it retains its natural enzymes, vitamins, and minerals, and doesn't contain additives like sugar or corn syrup. Raw honey is lightly filtered to remove debris like honeycomb and beeswax, but it's not pasteurized or filtered to remove pollen and air bubbles.
How long is honey good?
Honey doesn't technically spoil, but the USDA recommends storing it for up to 12 months for best quality. After that, it's still safe to eat, but it might not be as good. Honey producers often include a "best by" date on their labels, which is around two years, to encourage consumers to use it while it's at its best. The FDA also recommends using honey within a year of purchase.
What do I do if my honey has crystalized or hardened?
Gently warm your honey to melt the crystals. Avoid direct heat (like a saucepan), instead placing your honey jar in a warm water bath. Remove the honey, stir it, and replace until you get the desired consistency back.
